The deflector plate was invented for a few reasons, no1. to create a true top down cooking experience enabling the user to be able to get that amazing crust and bark on iconic meats such as brisket in true offset smoker fashion, no2. allow full use of the entire grill grate, and no3. even out the temps from end to end of the smoker.
To install it, Simply set the upward deflector in place about 3 inches from the firebox wall and thats it! Get to cooking!
